Bethenny Frankel’s Chicken Salad

I’ve never watched the Real Housewives franchise, outside of circulated clips and memes. I do however remember the cultural buzz of the infamous stand-off between Omarosa and Bethenny Frankel on the Bethenny daytime TV slot. At the time being young and impressionable; Omarosa’s quip was an inspiration to pursue an education, and show up to work 15 minutes early assertive and confident. Somewhere along the way though, I’ve become more of a neighborhood luftmensch baking cupcakes just to feel something. And that’s where my TikTok FYP comes into play. The parasocial relationship I’ve developed with Bethenny Frankel deserves to be studied. Her indulgent food reviews have left me wanting more on several occasions. This chicken salad she helped to popularize is no exception. Despite all of this, I can say no matter how many times I watch Bethenny or Melissa Wood-Tepperberg scoop out a bagel I refuse to be influenced.

I also have an affinity for exorbitantly priced items from country marts (go figure) luckily, the recipe’s creator an NYC based Chef did the heavy lifting when creating this Round Swamp Farm dupe.

Ingredients:

(Makes about 4-5 servings)

2 large rotisserie chicken breasts (skin removed)

2-3 stalks of celery

1 small shallot, peeled

¼ teaspoon black pepper

Salt (to taste)

¼ teaspoon onion powder

2.5 teaspoons rice wine vinegar

½ cup Mayo

Directions:

1. Cut the rotisserie chicken breast into cubes. Place the pieces in the bowl of a stand mixer fitted with a whisk attachment and blend on low speed until the chicken breaks up into fine shreds.

2. Using a box grater with medium holes, grate the celery and shallot, into fine pieces (discard the strings of the celery that may be left behind after grating it).

3. On low speed or by hand stir the celery and shallot into the chicken shreds and then sprinkle in the pepper, onion powder and salt (to taste).

4. Drizzle in the rice wine vinegar and then add the mayo and stir everything together until combined.
