White Chocolate Raspberry Cookies
I remember the first time I tried this cookie at Subway on a hot summer day in a Central Valley California truck stop like it was yesterday. As you can imagine these small bites pair well with a cool glass of lemonade. I’m not too crazy about deli sandwiches, if they aren’t from the Grateful Deli- so do with that information what you will. This copy-cat recipe rivals the original and is an all time favorite. It is tried, true, and heavenly. Enjoy!
Ingredients:
1 box “JIFFY” Raspberry Muffin Mix
1/2 cup of butter - softened
4 oz. cream cheese - room temperature
1/2 cup granulated sugar
1 egg
1 tsp. vanilla extract
3/4 cup all-purpose flour
1/2 tsp. baking powder
1/2 cup white chocolate chips
Directions:
Preheat oven to 350ºF.
Cream together butter and cream cheese. Add in sugar and mix until incorporated.
Mix in egg and vanilla.
Add the muffin mix, flour, and baking powder to the bowl and combine. Fold in white chocolate chips. The dough will be sticky.
Form balls of dough into about 1 tbsp and cook for 12-14 minutes until edges are browned slightly.
Let cool slightly before transferring to wire rack.
